Our Story

The East Village Meat Market was founded in 1972 when the late Julian Baczynsky fulfilled his lifelong dream of owning a business and opened the humble butcher shop, bringing classic Ukrainian specialties to an always-evolving New York City.

Meet the family behind the meat

As a young employee of Baczynsky’s, Andrew Ilnicki worked his way up the ranks, learning the trade at the steel counter and eventually becoming the owner himself. Today, alongside his son Roman, the duo has preserved the shop's heritage and spirit by carrying on its legacy of quality cuts, time-honored recipes, and a commitment to community.
